Bahamas Zucchini Bread

 

This is a mouth watering zucchini bread recipe with a nice caribbean flavour to it. You will need the ingredients mentioned below to make this zucchini bread.

 

Ingredients:

1. Two cups of general (all) purpose flour.

2. One cup of brown sugar (packed).

3. One cup of whole wheat flour.

4. Three eggs.

5. Two bananas, squashed.

6. One cup of white sugar

7. One teaspoon each of salt and baking soda.

8. Two teaspoons of vanilla extract.

9. One cupo of walnuts. (chopped)

10. One and a half teaspoons of baking powder.

11. Half a cup of cooking oil.

12. Three teaspoons of cinnamon powder.

13. Half a teaspoon of nutmeg.

14. Half a cup of coconut (grated well).

15. Half a cup of applesauce.

16. Two and a half cups of zucchini (shredded).

 

Preparation:

1. You first need to switch on the oven and heat it to about 325 degrees fahrenheit. Then grease the sides and base of two loaf pans with butter or canola oil and then flour the sides and base of the pan as well.

2. Next, empty out all the flour (all purpose and wheat flour), baking soda, baking powder, salt and nutmeg into a mixing bowl and mix them together.

3. Then take the mashed bananas, three eggs, cooking oil, applesauce, vanilla extract, brown sugar and white sugar and mix all these ingredients together in a seperate bowl.

4. You can now add the first mixture into the second mixture and mix them both together. The chopped walnuts, zucchini and grated coconut can now be folded into the final mixture until they are evenly distributed.

5. Finally pour the batter into the two loaf pans, in equal portions and place it in the oven to bake. Let it bake for about 45 minutes or until a fork inserted into the center of the bread comes out without any batter sticking to it.

6. The bread can now be left in the pans to cool down for about 20 minutes. After that it can be shifted onto a wire rack to complete the cooling process.
